Winemaker's Notes

85% Cabernet Sauvignon; 15% Carmenère.
Our Cabernet Sauvignon comes from an old block of Cabernet: planted in 1920 with high density in special soil and geographic conditions. Our winemaking philosophy remains very natural and we adhere to minimal intervention. Our key points are 100% hand harvesting, strict fruit selection by optical state of the art grape selection, and specially this 2009 vintage we did gentle extraction methods and a judicious use of oak to preserve the fruit but integrate the complexity that a wine of this quality deserves. There is no stabilization, no clarification and a very light filtration prior to bottling. The 2009 vintage brought us very good structure and fruit concentration on this exceptional Cabernet Sauvignon.
Color: Brilliant dark ruby red color with deep purple shade. Nose: Intense nose with red fruit aromas and dry tea leaves, followed by subtle sweet spices. Palate: Very concentrated structure with very ripe, juicy and polished tannins, round mid palate with a long and pleasant finish.
Food Pairing: Ready to drink now or cellar for several years. Decant and serve at 60 to 65°F. Ideal companion for meats and elaborate dishes.

International Wine Cellar

Opaque ruby. Sexy aromas of cherry-cola and vanilla, with a spicy quality adding energy. Chewy, palate-staining dark berry flavors show very good intensity and become sweeter with air. Firm tannins linger on a spicy, smoky finish. This is a baby.
